  6. Put the lid on and leave in the fridge for 4 days.

  8. Remove front the salt be gentle when doing this..
  9. Wash & pat dry placing the yolks onto baking paper.
  10. 80 degrees for 45 mins then flip.
  11. 80 degrees for 45 mins remove & cool.
  12. Once cool grate over fresh pasta, salads for amazing flavour.
