Substitute for Water Spinach in Kangkung Belacan. Chinese greens like choi sum and pak choi make good substitutes. A great non green vegetable to use in this recipe is the humble beansprout. Stir fried beansprouts using this exact recipe and amounts are absolutely delicious.

Instructions to make Stir-fried Kangkung (water spinach):

  1. Cut the kangkung as per your preference, slice the garlic, tomato and red chilli.
  2. Add some oil to a pan, sautè the garlic and chilli together until fragrant, add the tomatoes and kangkung.
  3. Add a little water, oyster sauce, salt and pepper, check the taste and cover the pan for 5mins.
  4. When it's cooked, stir to mix and add the sliced scallions.
  5. Serve it with steamed rice, fried chicken and tofu (optional), or you can have it as it is. Enjoy!.

Add washed kangkong and stir fry on a medium high heat for one to two minutes. Add crushed chilli along with salt and stir fry till the leaves have withered. Oh yes, we cook kangkung with belacan and chilies. But I would also love to try out your version. Kangkung Belacan is a Malaysian spicy water spinach stir fry flavored with chilies and shrimp paste.
